Pineapples Foster

If you’ve gotten into our spirited week of everything pineapple, chances are you have quite a bit of the tropical fruit lying around. We thought about sharing a super intense pineapple upside down cake recipe, but who really has time for that?

Then we thought about our fav way to enjoy pineapples for dessert – topped with caramelized sugar and a scoop of ice cream. YUM!

You can pretty much use any fruit with this recipe to create a super easy and very delicious dessert treat, but we’re partial to everything pineapple. Check out some of our other delicious pineapple creations like Pineapple Fried Rice and Pineapple Punch.

Ingredients

1 pineapple, sliced in 8 rings

3/4 cup organic brown sugar

1 tsp cinnamon

1 pint vegan vanilla ice cream

Prep

Preheat oven to 450°.

Line a baking sheet with parchment paper.

Method

Place your rings of pineapple on the parchment-lined baking sheet leaving some space in between each.

Sprinkle each ring with brown sugar to cover the top.

Sprinkle a tiny bit of cinnamon on each ring.

Place the whole baking sheet in the oven and cook until the sugar caramelizes.

Serve each slice with a scoop of ice cream on top and a dash of cinnamon.

Notes + Serving Tips

Serve immediately for best flavor.

Store for up to 3 days in the refrigerator and use in a savory salad, Pineapple Fried Rice, or in a fruit salad.
