Mousse de Maracuja (Passion Fruit Mousse)

As we celebrate the start of this year’s Summer Olympic Games in Rio, we’re channeling everything yummy and Brazilian.

We’re sipping Watermelon Caipirinhas, and whipping up some tasty Brazilian treats. That’s where this delicious mousse comes in. Mousse de Maracuja is a super popular dish in Brazil that’s basically passion fruit cheesecake. Count us in!

Check out our tasty vegan version below. And don’t worry if you can’t find fresh passion fruit – you can always buy the packaged version to use!

Ingredients

1 cup raw cashews

2 cups hot water

2 passion fruits, pulp only (or 3/4 cup packaged passion fruit pulp)

1/3 cup raw agave nectar

1 Tbsp coconut oil

3 Tbsp water

Garnish

3 Tbsp passion fruit pulp

Prep

Heat 2 cups of water to boil.

Place raw cashews into a medium-sized bowl.

Pour the boiling water over the cashews.

Let the cashews soak for 2 hours.

Drain and pat the cashews dry.

Method

In a blender, add the passion fruit pulp, soaked raw cashews, and 3 Tablespoons water.

Blend until smooth.

Once it is well blended, add the raw agave nectar and coconut oil.

Blend until well mixed.

Pour the mousse into tiny bowls or ramekins.

Place in the refrigerator or freezer to harden.

Garnish

Before serving, garnish with a spoon of passion fruit pulp.
