Makes about 2 cups
We’ve been known to use avocado in a majority of our meals, but our favorite way is this quick and delicious Zesty Avocado Dressing.
It’s the perfect sauce to have ready in the fridge for salads, snacks, marinades, or just adding to whatever you’re eating. Kick up that quinoa or pasta you’re making, or even marinade some portobellos.
Now that we know how healthy and nutrient-packed avocados and avocado oil are, this has turned into a weekly staple in our kitchen.
Ingredients
1 avocado, pitted and peeled
1 Tbsp raw agave nectar
2 limes, juiced
1/2 cup avocado oil (or olive oil)
1 clove garlic, minced
water, as needed
sea salt, to taste
freshly ground pepper, to taste
1/4 cup cilantro or parsley, minced (optional)
1 jalapeño, seeded and diced (optional)
Prep
Prepare a food processor or high powered blender.
Method
Combine pitted and peeled avocado, raw agave nectar, lime juice, avocado oil, and minced garlic in the food processor or blender.
Blend until fully combined.
Add water and blend to reach desired texture. (For dips, leave it thick. For dressings and marinades, thin it out.)
Once the desired thickness is reached, add sea salt and freshly ground pepper to taste and mix thoroughly.
If desired, add cilantro, parsley, or seeded and diced jalapeño for a punch of flavor.
Notes + Serving Tips
Serve chilled or at room temperature.
Use it to dress greens, as a dip, or even as a marinade. Or, add to quinoa, pasta, and more.
Store in the refrigerator for 3 to 5 days.
