Bob’s Red Mill Nooch Crackers

This month we’ve partnered with Bob’s Red Mill to get to know some really interesting ingredients we should be using. Last week they brought us a delicious Lemon + Mint Freekeh Salad, and introduced us to a new grain we’re now obsessed with!

This week they’re bring us delicious Nooch Crackers. A crazy name for some nutritious gluten free crackers perfect for dipping in your fav spreads.

From the Bob’s Red Mill Team:

“Almond flour and nutritional yeast come together to create a lightly crisp, savory cracker. These tasty crackers come together quickly and will disappear even faster!”

Ingredients

1 Tbsp golden flaxseed meal

3 Tbsp water

1 3/4 cup almond flour

1/4 cup nutritional yeast

1/2 tsp sea salt

1 Tbsp coconut oil, melted

2 Tbsp fresh lemon juice

sea salt, to garnish

Preheat oven to 350°.

In a small bowl, combine the golden flaxseed meal and the water.

Let sit for 5 minutes.

Method

Combine almond flour, nutritional yeast, and sea salt in a large bowl.

Add the melted coconut oil, fresh lemon juice, and flaxseed meal mixture and mix to form a dough.

Transfer the dough to a piece of parchment paper and cover with parchment.

Roll the dough with a rolling pin on the outside of the parchment until it reaches about a 1/16-inch thickness.

Remove the top sheet of parchment and transfer the bottom sheet with the dough attached to a sheet tray.

Cut the crackers into squares or other desired shapes, leave a tiny bit of space between each.

Lightly poke each cracker with a fork and sprinkle with sea salt.

Place the crackers in the oven for 20 minutes or until golden.

Notes + Serving Tips

Serve crackers hot or at room temperature with your favorite spreads.

We love to pair with Artichoke Ricotta Dip, Walnut Pesto, or Wine + Cheese.

Store at room temperature for up to a week.
