Mexican cuisine has brought us some of our absolute fav dishes… everything from delicious authentic delights, to some americanized favorites like nacho cheeze. But let’s be real our top favorite food we learned from our neighbors to the south has to be guac.
This Cinco de Mayo we’re celebrating guacamole. Everybody’s favorite party snack, a girls night staple, and probably the best topping of all time!
We’re avid guac lovers, so we appreciate everything from classic to crazy. In this recipe we’re bringing you a delicious and simple classic guacamole with some optional fancy mix-ins for those who are ready for a fiesta.
P.S. As far as food and drink pairings go, Margaritas and Guac are it.
Ingredients
4 ripe avocados; peeled, seeded, and rough diced
1 large shallot, diced
1 clove garlic, minced
2 serrano chiles (or substitute jalapeños); roasted, seeded, and minced
2 limes, juiced
1/3 cup cilantro, chopped
sea salt, to taste
fresh ground pepper, to taste
Optional
1/2 cup roasted fresh corn
3/4 cup mango, peeled and diced
Garnish
lime wedges
Prep
Prepare all ingredients and roast as needed.
Have a large bowl and plastic wrap ready for guac storage.
Method
In a mixing bowl, combine avocados, diced shallot, minced garlic, minced chiles, lime juice and chopped cilantro.
With a large spoon, mix ingredients and mash slightly.
Season to taste with sea salt and fresh ground pepper.
Optional
Take your guac to the next level by adding roasted fresh corn or diced mango for a uniquely sweet twist.
Notes + Serving Tips
Garnish with lime wedges.
Guac can be made several hours ahead of time and stored in the refrigerator.
Be sure to cover tightly with plastic wrap pushed down to directly touch the avocado mixture to prevent browning.
Stir, garnish, and serve with corn tortilla chips.
