Makes 8 waffles
There are some seriously awesome waffle-loving tv and film characters out there whose passion for the breakfast treat is the only thing that surpasses our own. Who didn’t want waffles after Donkey said that famous line in Shrek?
Waffles are the perfect brunch item because they have a slight sweetness that goes perfectly with fruit, but also a richness that pairs well with a more savory scramble.
We’ve whipped up a simple but delicious waffle recipe that’s the perfect staple to add to your breakfast lineup, or even a Brunch Party if you desire.
Ingredients
2 cups all-purpose flour
2 Tbsp organic sugar
1 pinch sea salt
1 Tbsp baking powder
1 Tbsp cornstarch
½ tsp ground cinnamon
2 cups non-dairy milk
2 tsp apple cider vinegar
3 Tbsp melted vegan margarine
Prep
Turn on your waffle iron.
Once heated, use a damp cloth to clean thoroughly.
Method
In a small bowl, combine non-dairy milk and apple cider vinegar. Let sit for 5 minutes.
In a large bowl, combine the all-purpose flour, organic sugar, sea salt, baking powder, cornstarch and cinnamon.
Whisk together ingredients to remove lumps.
Combine the non-dairy milk mixture with the vegan margarine.
Create a well in the dry ingredients then slowly pour in the wet mixture as you stir.
Stir just to combine. Don’t overwork the batter or your waffles won’t be fluffy!
Spray the waffle iron with non-stick cooking spray then scoop 1/4 cup batter into the iron.
Cook until golden brown.
Notes + Serving Tips
To keep the waffles warm while the rest are finishing, place on a platter and cover with aluminum foil.
For extra heating time, place the platter with waffles in an oven on the lowest temperature (or in an oven that was heated then turned off).
Add a dollop of Coconut Whipped Cream for some serious flavor!
