Irish Soda Bread

Our latest obsession? This vegan Irish Soda Bread!

No cute Irish grandmother? No problem! This delicious bread, with its authentic flavors, will transport you straight to Ireland minus the cost of airfare.

So fix yourself some Irish Soda Bread and fasten on your shamrock pins just in time for St. Patrick’s Day.

Ingredients

3 cups sifted all-purpose flour

1 tsp baking soda

1 Tbsp baking powder

1 tsp sea salt

1/2 cup organic sugar

1/2 box currants or raisins

1 1/2 cups non-dairy milk

1 ½ Tbsp lemon juice

4 Tbsp vegan margarine, melted

1 Tbsp caraway seeds, optional

Prep

Preheat oven to 350°.

Grease a baking sheet.

In a small bowl, combine non-dairy milk and lemon juice.

Set aside.

Method

In a large bowl, combine all-purpose flour, baking soda, baking powder, sea salt, organic sugar, raisins, and caraway seeds (optional).

Add melted vegan margarine to the non-dairy milk mixture.

Pour liquid mixture into dry ingredients.

 

Assemble

On a lightly floured surface, gently knead until dough is just moistened and combined. Do not over work!

Shape into a disc about 1 ½ inches in height.

Place onto the greased baking sheet.

Make a ¼ inch “X” on top.

Bake for 45 minute to 1 hour.

Irish families enjoy soda bread for every holiday, but especially love it on St. Patrick’s Day.

It’s great for breakfast served warm with hot tea or Irish Iced Coffee.
