What’s better for a day full of sports than a giant delicious pan of Cheezy Nachos? Correct answer: NOTHING.
Besides the addictive nacho cheeeeeeze sauce, our fav thing about this recipe is that it’s so easy to make when you’re busy entertaining and watching the games. Make the nacho cheeze sauce ahead of time then just throw the ingredients on top of chips and bake when people arrive or want a second round.
With March Madness Final Four games coming up this weekend, it couldn’t be a better time to make some nachos.
Nacho Cheeze Sauce
1 Tbsp olive oil
1 yellow onion, diced
2 carrots, peeled and small diced
2 cloves garlic
1 tsp paprika
1 Tbsp fresh lemon juice
2 Idaho potatoes, peeled and cut into very small pieces
1 cup cashews
2 chipotle peppers, diced and 1 tsp adobo sauce from a can of chilies in adobo sauce
1/2 cup almond milk
1/2 cup water
2 Tbsp nutritional yeast
Nachos
1 bag corn tortilla chips
2 jalapeños, one sliced and one diced
1 can black beans, drained and rinsed
1/2 cup red salsa
Garnish
1 Tbsp cilantro, chopped
1 avocado, chopped
1 lime, cut into wedges
Prep
Preheat the oven to 400°.
Nacho Cheeze Sauce
Place olive oil in large flat sided pan over medium heat.
Add diced onion, diced carrot, diced jalapeño, garlic cloves.
Sauté until softened.
Add paprika and sea salt and stir.
Add cut potatoes and cashews and sauté an additional 2 minutes.
Add the lemon juice, and stir to deglaze.
Add almond milk, water and the chipotle peppers with adobo sauce.
Bring to a simmer, and cook until carrots and potatoes are soft.
Pour mixture into a high powdered blender or food processor.
Blend until smooth, adding water as necessary.
Taste and add nutritional yeast flakes as desired for a richer cheezy flavor.
To amp up the color, add yellow mustard or turmeric.
Method
Place the corn tortilla chips out on a large baking sheet.
Pour the Nacho Cheeze Sauce over the chips.
Then sprinkle black beans, salsa and any other desired toppings on top of the chips.
Place the nachos in the oven for 5-10 minutes until Nacho Cheeze Sauce has soaked in and all of the ingredients are warm and slightly toasty.
Notes + Serving Tips
Place the baked Nachos on a serving platter and top with chopped avocado and chopped cilantro.
Place lime wedges around the platter.
Squeeze the lime on your section and enjoy!
