Winter Citrus Viniagrette

Have you noticed that citrus fruits seem to sparkle and shine in the Winter?

It’s hard to ignore the bounty of bright juicy citrus fruits this time of year. From tangy lemons to sweet grapefruits, orange you glad citrus is in this season?

Citrus fruits come in to season late December and stay through late March when they reach their peak sweetness and juiciness.

With all the beautiful fruits mother nature has given us, it’s only appropriate to gather up all the produce we can and take advantage!

For a pop of winter citrus, give this light vinaigrette a shot. The citrus flavor comes from blood oranges, AKA your orange’s cool exotic older cousin. It’s perfect over a simple salad of arugula or fresh shaved fennel, see for yourself!

Ingredients

2 Tbsp white wine vinegar

¼ cup fresh blood orange juice

2/3 cup olive oil

½ clove garlic, crushed and finely chopped

1 Tbsp finely shallots, chopped

2 tsp finely fresh parsley, chopped

2 tsp finely fresh chives, chopped

sea salt

freshly ground pepper

Method

Whisk together ingredients except the olive oil.

While continuing to whisk, pour olive oil into mixture until fully combined.

Season with sea salt and freshly ground pepper to taste.
