ingredients
2 14 oz blocks extra firm tofu
2 Tbsp vegetable oil
1 small onion, chopped
1 cup of button mushrooms, sliced
1 cup cherry tomatoes, sliced in half
1 cup spinach
1 ½ tsp turmeric powder
½ tsp ground cumin
sea salt, to taste
freshly ground pepper, to taste
method
Place tofu on top of several paper towels to absorb excess liquid. Using a fork, or other tool, smash tofu.
In a large skillet heat vegetable oil over medium high heat. Add chopped onion, cherry tomatoes, and sliced mushroom and cook until softened.
Add turmeric powder and ground cumin and stir until fragrant. After one minute, add tofu and stir until heated through.
Add spinach and continue to cook for 3-4 minutes.
Season with sea salt and freshly ground pepper.
